Boiled Yam with Savory Palm Oil Stew (Ampesi)
About This Recipe
"A traditional, nutrient-rich Ghanaian dish featuring perfectly boiled yams paired with a decadent, savory red palm oil stew, spinach, and smoked fish."
Cooking Steps
Step 1
Peel the yams, cut them into medium-sized slices, wash thoroughly, and place in a pot of salted water.
Step 2
Boil the yams for 20-25 minutes until a fork slides in easily. Drain and cover to keep warm.
Step 3
For the stew, heat pure Zomi palm oil in a pan and sauté sliced onions until soft.
Step 4
Grind fresh tomatoes, peppers, and onions in an earthen bowl (Asanka) or blend coarsely, then add to the oil.
Step 5
Let the stew simmer for 10-15 minutes on medium heat.
Step 6
Stir in flaked smoked fish (like mackerel or herring) and salt to taste, simmering for another 5 minutes.
Step 7
Serve the hot boiled yams flanked by the palm oil stew, boiled eggs, and a side of avocado.
