Cooking Steps
Step 1
Blend fresh tomatoes, onions, habanero pepper, and ginger until smooth.

Heat vegetable oil or pure palm oil in a deep pot and sauté sliced onions until translucent.

Add tomato paste and fry for 5 minutes, stirring constantly to remove bitterness.

Pour in the blended tomato mixture and simmer for 15-20 minutes until the oil separates on top.

Season with curry powder, thyme, nutmeg, bay leaves, stock cubes, salt, and black pepper.

Wash Basmati Rice thoroughly until the water runs clear, then add it to the tomato stew.

Add just enough water or stock to cover the rice. Cover tightly with foil and a lid, and cook on low heat for 30 minutes.

Stir gently, garnish with sliced onions or bell peppers, and serve hot with grilled chicken or fish.
